Baking tin with mussels and potatoes

Cucina cozze

Ingredients for 4 people

1 kg of mussels

5-6 large potatoes

100 gr rice

1 medium onion

100 gr tomato

Parmesan cheese

bread crumbs

parsley, oil, salt




Preparation:

Clean the mussels, then open them with a knife, put the tip inside and sliding the blade along the entire perimeter, (for those who want to skip this procedure, can open them cook in skillet.Peel the potatoes, cut them into rings, cut even slices tomatoes and finally even the onion.

In a baking tin put a little olive oil, place the onion on the bottom, potatoes, tomatoes and add a pinch of salt, continuing with the mussels, rice and parsley.

Now add another layer as previously, potatoes, onion, tomatoes, mussels, rice, parsley, finish with the last layer of potatoes and sprinkle with the parmesan and breadcrumbs.

put into an oven at 180° by covering the baking tin with aluminium foil for about 25-30 minutes, remove the aluminium foil and let bake for another 25-30 minutes until potatoes are well browned.
